Filling Ricotta and Spinach
Ingredients for 4 people:
  • Sheep ricotta 280g
  • Nutmeg 5 g
  • Salt to taste
  • Fresh spinach 130g
  • Parmesan 70g
  • Lemon rind 1 spoon
  • Garlic 1 cloves
  • Oil extravergine di oliva 10g
  • Egg yolk 1
To prepare the filling:
- Wash the spinach under cold water and remove the stem.
- In a pan put the olive oil and add the garlic.
- When the oil is hot add the spinach and then the salt.
- Leave the spinach in the pan until cooked once cold take away all the water.
- Chop them finely add the ricotta and the parmesan adding a bit of lemon or the nutmeg salt to taste.
- In the end just add the egg yolk to thicken the mixture.
